What do mean you haven't worked out who's cooking Christmas Lunch this year?!

Don't worry though - we've got that covered. Either delivered chilled on Christmas Eve with simple heating instructions for you to heat and serve yourselves, or you can relax with family and friends while our chefs and waiting staff cook and serve it up for you in your home on the day itself!.

Trio of Fish Starters - Home Cured Salmon Gravadlax,, Smoked Halibut & Crayfish with Mango
We use Norfolk Black turkey which gives you a much better, almost gamey flavour, together with Gloucester Old Spot chipolatas and bacon. Maris Piper potatoes are roasted in goose fat and rosemary, and sprouts are cooked with chestnuts and bacon because everything tastes better with bacon, right? (vegetarian alternative also available). Parsnips are roasted with Cotswold Bees Borage Honey, and your turkey gravy is made from the turkey bones after we have de-boned all the Christmas turkeys. Everything is prepared for maximum flavour - just the way it has been for the last 10 years.

Our Christmas pudding is made from my Gran's old recipe which dates back at least 100 years - so it's well tried and tested, Not everyone is a Christmas pudding fan of course, so we also have other options for you.
But what will your guests think about you not slaving over a hot stove all day on Christmas Eve and Christmas Day morning? We have one regular client who passes our food off as her own to her guests - just transfers it to her own dishes. That's the way to do it - you deserve it!

Gift voucher for a dinner party cooked in your home (2)

"I was looking for an unusual gift voucher..... and found yours...."  That was 4 years ago. The lady buying the voucher was buying it for her sisters birthday - you can see the meal we cooked for her here. She enjoyed it so much she in turn brought a gift voucher for her brother which I served a month ago near Bath. Keep it in the family!

When you live in Britain you have to make the most of those balmy evenings - and this was one! The guests gathered outside on the terrace for drinks and canapés while they watched their meal come together in the kitchen.

Smoking the trout fillet before I left - this is something you can't do at the venue - who wants the smoke billowing through their house?
Honey and lavender marinated leg of lamb
Leg of lamb for the main course - marinated in honey, lavender, soy, grain mustard, five spice and a few secret ingredients. Served with crushed Jersey royals - just coming into season at that time

Salad of grilled butternut squash, asparagus, feta and pomegranate with lime and olive oil dressing 
The good thing about large desserts you can serve yourself at the table is you take as much as you like! And of course you get left overs for the next day - they had a barbecue the next day.

Flower power!

So if you saw someone stopped in the middle of the road on a country lane near Bath one night after 11pm in June at full moon picking flowers using his van headlights - it might just probably have been me.

I got a good two bags of elderflowers that night - the bag above was one of them, just saw them shining in the headlights on the side of the road and had to stop. As you do. There's no time to waste in this business.
After soaking in water they lasted (along with another couple of bag's worth picked along the old railway in Tewkesbury) a good two months worth of parties & weddings for elderflower poached salmon / chicken (see more of that here: http://www.thecotswoldfoodyear.com/2007/06/chicken-in-elderflower.html)

Also in June we did a few parties at Upper Court, and it seemed wrong not to use the flowers in their kitchen garden. A month previously it had been the chive flowers that had gone on the dishes we made, now it was the turn of the sage and mint flowers which were abundant at that time - taste amazing too!
