Gift voucher for a dinner party cooked in your home (2)

Sunday, June 24, 2012
"I was looking for an unusual gift voucher..... and found yours...."  That was 4 years ago. The lady buying the voucher was buying it for her sisters birthday - you can see the meal we cooked for her here. She enjoyed it so much she in turn brought a gift voucher for her brother which I served a month ago near Bath. Keep it in the family!
Blacksticks Blue cheesecake and the ever popular smoked salmon blinis
When you live in Britain you have to make the most of those balmy evenings - and this was one! The guests gathered outside on the terrace for drinks and canapés while they watched their meal come together in the kitchen.
Trio of smoked trout - Ballottine of salmon wrapped in smoked trout, smoked trout tartare and smoked trout fillet on courgette carpaccio
Smoking the trout fillet before I left - this is something you can't do at the venue - who wants the smoke billowing through their house?
Honey and lavender marinated leg of lamb
Leg of lamb for the main course - marinated in honey, lavender, soy, grain mustard, five spice and a few secret ingredients. Served with crushed Jersey royals - just coming into season at that time

Salad of grilled butternut squash, asparagus, feta and pomegranate with lime and olive oil dressing
The good thing about large desserts you can serve yourself at the table is you take as much as you like! And of course you get left overs for the next day - they had a barbecue the next day.
Large passionfruit panna cotta - see 'recipe' here
Large apple tarte tatin - it was virtually demolished!

Thai style lunch near Stratford-on-Avon

Tuesday, July 19, 2011
A birthday celebratory meal for my longest standing repeat customers and all made fresh once I got to their apartment. They had recently had thai style sea trout in a restaurant in Cirencester and had enjoyed it so much they wanted to try it again, so I tried it with the local trout from the trout farm.

Thai style canape starter

  • Shotglass of thai style crab salad
  • Prawn and vegetable rice paper wrap
  • Spoon of larb - this was a revelation when Adam first made it after his Thai trip - thai fish sauce, minced pork, loads of lime, lemon grass, ginger, fresh mint & coriander thrown in at the last minute. Unbelievable. We served a couple of seconds of this too.
  • Thai style chicken satay with satay dip which also went with the prawn wrap

Main course - Trout in coconut milk baked en papillotte with lemon grass, lime, ginger, garlic, basil (fresh from the garden of one of the guests) and coriander
Coconut and lime pilaff rice and thai style stir fried vegetables topped with roasted rice.
Cooking en papillotte means you get all the aromas as you open it at the table. It also keeps the fish wonderfully moist.

Trio of Thai style desserts

  • Tab tim grob - a variation on this recipe (maybe red food colouring needs to be more). I left them guessing what this was till the end. Water chestnuts - who would have thought it? It's so light and refreshing - just what you need on a warm day.
  • Gluay ping - grilled bananas in palm sugar syrup - popular street food. See more info here . Cooked these on the grill pan while they were eating the main course - charred flavour worked well. Helps if they're slightly underripe.
  • Chocolate and mango mousse - a variation on this recipe

With coffee

Khanom Mo Gaeng

This was Hannah's contribution - she had been making this while I packed up 3 other events going on on the Sunday morning.

Again we left them guessing what this was. What? Shallots on top of something sweet? Sounds strange, but tastes so good.

We had started off with this recipe, but among the million other ingredients passing through the kitchen that weekend had forgotten to cook the mung beans, but had some chestnuts we were using for something else so made a little substitution - isn't that how all the best things are found?

Dinner party cooked in the Cotswold Water Park near Cirencester

Wednesday, June 02, 2010
As you pass through the gates of the Lower Mill Estate you leave the world behind. Part nature reserve part relaxation zone for families on holiday it's so peaceful and laid back and when you see the houses set against the lakes you wonder whether you really are in the Cotswolds at all or Scandinavia or New England. Water is everywhere - all the houses are set against lakes and some have streams/ rivers running around them too - it all adds to the zen.

This meal was for a 70th birthday at Velvet Lodge.Trio of fish starters - Crab salad with pink grapefruit, salmon ballottine wrapped in smoked trout and grilled tiger prawns with fennel and apple salad

"....this just tastes so fresh - you know how at some restaurants the food can taste....." Well it was fresh - they had watched as I diced, sliced and mix in the few minutes before serving. It makes a difference. I first made this on Christmas eve last year for a group in Kidderminster and liked it so much I thought I would offer to everyone.

Prawns are skewered on lemongrass.

Pork tenderloin wrapped in parma ham with spinach salad, garlic parmentier potatoes and warm orange vinaigrette.

The pork tenderloin wrapped in parma ham is back by popular demand. This is a much lighter summery version. I liked the spinach salad I had served at the barbecue the night before so much I recreated the same for this dish. A little on the plate and a salad bowl as well - you can't get enough of it. Simple things - spinach, the best baby tomatoes you can find, black olives and shallot. As I had some peppers I added those too.

Chef to cook for a dinner party

Sunday, April 18, 2010
I like to have a bit of music on while I work in the kitchen.....
I was at Wellacres 5 times in 10 days over the Easter period - as well as everything else going on. This (the fifth) was for a 70th birthday. Staying in is the new going out, as they say, and it's even better when you have your own string quartet. The kitchen and dining room at Wellacres is a combined room (as large as a house in itself), so not only could the guests watch the quartet play while they ate, but they also their meal cooked in front of them - almost like being in a theatre really.....

Smoked trout trio (with fillet of pink peppercorn home cured trout) and Salad of parma ham, poached pears and glazed goats cheese.

Fillet of beef with wild mushrooms, spinach and fondant potato (all time classic & best seller).

Assiette of desserts - Mini Baileys bread and butter pudding, spoon of creme brulee, raspberry shortbread, rum baba and homemade orange sorbet.

Wedding catering between Evesham and Pershore in Worcestershire

Monday, August 24, 2009
If it's a wedding reception venue with unique charm and atmosphere you are after - a barn might be just the thing - the old oak beams and Cotswold stone give a rustic feel, and when you have all your friends and family around you, you feel very cosy. The Barn at Springhill Farm between Evesham and Pershore in Worcestershire has been re-furbished just this year - and I couldn't believe the transformation when I saw it again a few weeks ago. Light, airy and vast it makes for a wonderful venue with excellent facilities.
The wedding blessing ceremony was held by the lake, and champagne and dry snacks served on the terrace outside the main house afterwards by the party angels while we set up for the wedding breakfast for 100 guests behind the scenes in the barn. After so many marquee weddings, it was so nice to have a solid floor, walls (no wind blowing through the place), a catering size sink with running water and lots of space to cook in.
Dry snacks

The economic alternative to canapés. Here they are (below right) a couple of days before just after baking.

  • 3 types of palmiers - Anchovy, sun dried tomato and black olive
  • Gruyere allumettes
  • Roasted almonds and cashews
  • To see more on how they are made click here

Starter
As the wedding couple wanted to keep the menu very simple to please all their guests they had requested pâté as a starter. I made a smoked trout pâté rolled in cold smoked trout for a starter with trout from the local Donnington trout farm. This was served with marinated cucumber and dill, salad and the melba toast we had made on the preceding Wednesday night.

Then for Grandma who could only eat pureed food I made the above right version - with milk soaked bread, cucumber jelly (cucumber juice set with agar-agar in canapé size muffin tins) and the trout pate without the cold smoked trout around the edge.

For the vegetarian guests they had chosen red lentil pâté. I added a few breadcrumbs to the recipe too so it set a little firmer then wrapped it in leeks. This was really a revelation - it tasted so good with all the spices and lemon - like an enhanced hoummous. I left out the nuts as there were a few guests with nut allergies, but added some olive oil which lightened it too.

Main course

As is so often the case, there was a lot of work involved in getting the main course out quickly and hot, so it was only after we had served it we remembered we should have take a photo. If you have been to a music festival recently you may have come accross Pieminister pies. The wedding couple are Pieminister fans and that was what they had requested for their main course - Matador (beef and chorizo) & mushroom and asparagus for the vegetarian guests. As it is the wedding couples special day I always like to prepare whatever they want - so that is exactly what we did, and plated them with new potatoes in chives, Chantenay carrots and french beans in red onion butter. There were sole goujons and homemade chips for the children which looked like the one seen here last year (scroll to Monday or Thursday).

For Grandma who could only eat pureed food, I had pureed one pie filling and topped it with mashed potato and served it with carrot puree. Very delicious. Really!

Dessert They had enjoyed the raspberry sorbet so much when I delivered their bistro meal a few months before they had asked to add that as part of their raspberry trio dessert.
  • Dark chocolate and raspberry tart
  • Shotglass of raspberry and marscapone trifle
  • Raspberry sorbet
A little raspberry coulis is dotted in between.

Of everything we did this proved the most challenging. Luckily the equipment hire company we use (chairs, crockery, glasses, cutlery, oven etc) is just down the road from us so they picked up my 6 ft upright freezer and took that to the venue along with all their equipment. That meant we could pre-ball the sorbet using my ice cream tip, and then place it in the tuile baskets (stops it melting accross the plate) just as they were being taken by the waiting staff.

I made the tart cases (above left) for the chocolate tart in muffin tins on the preceding Tuesday evening while my dad made the tuile cases (above right), shortly before we cut all the new potatoes. The chocolate tarts were baked on Friday, then flashed in the oven after the main course had gone and then topped with the raspberries. The shotglassess were made in 2 stages - the base just after the starter had gone, and the top after the main course had gone - fresh is best!

Sunday roast

Thursday, December 04, 2008
Crab salad - the classic dish that everyone loves
Roast saddle of lamb with caper and mint red wine sauce

served with rosemary roast potatoes, chantenay carrots, french beans and mangetout in red onions

I served the above at Broadwell Farm (one of my favourite kitchens to work in) at Broadwell near Stow Sunday 30th November 2008.

Meanwhile in Broadway on the same day, a group of regular clients chose smoked trout parcels. Nomally topped with tiny bit of caviar, as they had had this with their starter two days before, on this occasion they had a spear of asparagus to garnish the top.

Smoked Donnington Trout Trio

Sunday, November 23, 2008
Ballottine, smoked trout fillet with lime and smoked trout tartare
Salmon and smoked trout roulade (ballottine)

Fresh salmon..... ....is rolled, as described for my canapé roulades.....

Then poached in water at 80⁰C, off the heat. As the roulades are so small the residual heat in the water cooks them in about 8 - 10 minutes. This way the salmon stays soft - if you kept the water on the heat they boil and become hard and overcooked.
When cooled the roulades can be unwrapped and rolled in smoked trout.
These ballotines are then left to rest in the fridge, so they stay together when you cut them. I garnish them on top (as shown above) with a little crème fraîche and caviar.

Fillets
For this I ask the trout farm at Donnington for whole (unsliced) sides of smoked trout. I then cut thick d-cut fillets and cut these into 2 or 3 depending on size (i.e. how far up from the tail you are). These are sprinkled with grated lime zest (which I also do for barbecued fresh trout) and milled black pepper.

As guests are tucking into their homemade bread rolls which we always serve as they sit down, I pop the trout fillets into the oven for just 2 - 3 minutes, so they are warm, the last thing to go on the plate before the waitress takes them away. If you warm the fillets through, the texture changes - it softens like the ballottine. You can leave them in to cook fully if you prefer, but they are best served like this at the last minute, just warmed through.

The fillets sit on thinly sliced cucumber, and the richness of the smoked trout is off-set with the crème fraîche, lemon and chive dressing
