Don't worry though - we've got that covered. Either delivered chilled on Christmas Eve with simple heating instructions for you to heat and serve yourselves, or you can relax with family and friends while our chefs and waiting staff cook and serve it up for you in your home on the day itself!.

Trio of Fish Starters - Home Cured Salmon Gravadlax,, Smoked Halibut & Crayfish with Mango
We use Norfolk Black turkey which gives you a much better, almost gamey flavour, together with Gloucester Old Spot chipolatas and bacon. Maris Piper potatoes are roasted in goose fat and rosemary, and sprouts are cooked with chestnuts and bacon because everything tastes better with bacon, right? (vegetarian alternative also available). Parsnips are roasted with Cotswold Bees Borage Honey, and your turkey gravy is made from the turkey bones after we have de-boned all the Christmas turkeys. Everything is prepared for maximum flavour - just the way it has been for the last 10 years.

Our Christmas pudding is made from my Gran's old recipe which dates back at least 100 years - so it's well tried and tested, Not everyone is a Christmas pudding fan of course, so we also have other options for you.
But what will your guests think about you not slaving over a hot stove all day on Christmas Eve and Christmas Day morning? We have one regular client who passes our food off as her own to her guests - just transfers it to her own dishes. That's the way to do it - you deserve it!

The local business we regularly make lunch buffets for always look forward to our arrival and fight for first place in the queue. They're never sure what they'll get - it depends what recipes/ ideas we fancy trying out. 
Ham and egg picnic loaf
I had wanted to try out a picnic loaf for years - just never got round to it till last year. You cut the very end off the bread and scoop/ tear out the insides of the loaf. Then dice a bit of the bread inside and mix it with whatever you like. I did this with ham, egg, tomato, pepper, onion, rocket bound with mayo. You need to bind your ingredients with either cream cheese or mayo to make it stick together. 
Fill the inside of the loaf with your filling making sure every space in the loaf is filled & almost overflowing. Place the sliced end of the loaf back on and place on a tray/ plate and cover with cling film. Refrigerate for at least an hour to help the filling 'set'. Then you can slice it - use a very sharp serrated knife. 

This looks impressive for a picnic or summer buffet. 

Stromboli

Stromboli is a similar idea - the filling is added to raw bread dough and baked inside. Ideally it should be pinwheel in appearance - should have rolled out the one below wider.......
A fusion of Caribbean and Italian ideas? This was Caribbean style chicken and fresh coconut in the middle of bread dough.

Lunch buffets in the middle of your one day training course - same old same old right? Or maybe not. I like to try out new things on the lunch buffets we do (another one tomorrow). After baking the chocolate cake in an orange (you get a great orange flavour from the skin) I tried a few other things in the following weeks back in June last year (only just catching up with the backlog of pics).

Coconut and passionfruit panna cotta served in the emptied passionfruit shells - best use of ingredients?
Fruit salad in pineapple. Also want to try out a coconut cake baked in pineapple shell.... AND meringue baked in the pineapple shell.

Christmas sandwich buffet - fun style!

It's nearly the end of October and everyone else is using the 'c' word so here it is again: Christmas is on the way - you know it's true! So if you can't beat 'em join 'em!
Turkey, red pepper, spinach and cream cheese tortilla pinwheel. It's nice when ideas you have in the middle of the night turn out. 
 We've been making regular lunch buffets for this client for their training courses over 2 years. Last Christmas we made 2 Christmas theme events - always good to try something different!
Salt beef, rocket and horseradish snowman sandwich. The eyes are black olives, the nose - well a carrot naturally! And the'buttons are pink peppercorns all stuck on with cream cheese. Fun, no?!
Another turkey variation on another day - this was turkey, spinach and cranberry. Classy photo - was in a rush-rush-rush........
Poppy seed cracker santas. When I did these again I cut the gherkins smaller - second time lucky! Pepperonie hats and caper eyes. 
Rudolf pork and beetroot chutney sandwiches with red pepper noses and pretzel horns. 
Frangipane mince spies among other Christmas style cakes
It'll be Easter eggs next!

Broad Marston Manor was like one of those winter scenes you see on the front of Christmas cards. The last few miles had been dicey with the snow filled roads frozen to an ice rink. Like a bit of adventure though.
With a week full of events everything had to be made fresh on the day so it was rush-rush, hence not many new photos :(
Pan rustico - halfway to sourdough using this recipe  - so good I am going to have to make it again and try some this time. Also made corn bread like this one.
Paella - similar to this one from last year

Gluten free brazo gitano - as there were a few gluten free guests I made the whole thing gluten free. Amazingly light. - the end pieces were amazing! Filled with whipped chantilly cream and strawberries.

Whole vanilla roasted pineapple just after cooking. 


Rice pudding tarts with blood oranges + some gluten free tart cases 
(As it was a delivery the rice pudding made with half evaporated milk, tart cases and blood orange segments were delivered separately so they could simply be put together just before serving to be at their best). Definitely one to do again!

Originally inspired by this lemon meringue layer cake as I was browsing for ideas, I then found Nigella's recipe as I was flicking through books on the shelf and just adapted that with a cream cheese/ marscapone filling.

Herb pitta crisps with cheese and onion dip
Fillet of beef open sandwich with mustard cream cheese on sun dried tomato foccacia  - luckily for this party there were some fillet ends after cutting the fillet steaks for the parties we were cooking for the following day 
Homemade millionaires shortbread (link to recipe here) - a million times better than shop brought!
White chocolate and raspberry cupcakes - this recipe  for the sponge (couldn't find a  grown up to help me - so I had to operate the gas myself) and a buttercream icing with raspberry coulis
Pear and mincemeat cake - like this recipe with the crumble topping 

Spoons of orange segments and coconut - healthy living. This was originally one  of my Nana's standby desserts. My mum used to make it too when my Dad was away on business.

Grilled tiger prawns piri piri - always popular when we do them. Grilled and them mixed  with piri piri sauce.
Spot the sarcasm. Luckily my dad does most of the accounts - keep it in the family - but while reviewing the invoices this afternoon I found this event from November that I hadn't blogged - that's November 2010 (so far behind).

Stuffed peppers - finish in the oven to crisp the parmesan/ breadcrumb topping

Paella
An old family recipe which I've updated slightly. Maternal grandparents had a spanish friend who lived in the UK in the 60's -  and it was passed down through the ages in his family. It was served only at special occasions - and for special people. This one was made without seafood as there were some members of he group who couldn' t eat it. 
As I used belly pork in the paella I cut off the skin first to make crackling which you can serve with it -  it's everyone's favourite part!
